One of the best meals you could ever cook in a crock pot is chili. Chili is a delicous recipe that can be made in many ways in a crock pot. My favorite crock pot chili recipe is as follows.
1 or 2 (16) oz bags of pinto beans, drained
1 1/2 or 2 (14) oz cans of tomatoes, cut up
1 1/2 - 2lbs ground beef, browned and drained
1 large white or yellow onion
1 green pepper or some Jalapeno's if you like. test test test
1 or so red peppers*
1 or 2 tablespoons minced garlic
Up to 3 tablespoons chili powder (or to taste)
1-2 teaspoons black pepper
1 teaspoon cumin
1 teaspoon Tabasco sauce {or to taste}
Please note, soak the pinto beans in water overnight. The next day put in a pot with water and bring to a boil and let them simmer for 1.5 hours or so.
Add all the ingredients to the slow cooker on high for one hour then put them on low after the hour and let cook for 5 more hours.
This, in my opinion is the best crock pot chili recipe that I have ever eaten, I love to have this several times during the winter months and a couple times during the warmer times of the year. It is fun to cook, at least it is for me. I even enjoy cooking this chili durning the 4th of July holiday season. It always gets great compliments from everyone.
